My take on a Mexican Summer Salad

We live in Illinois and Winter tends to be annoying after awhile.  I get in dinner ruts and some nights I just want salad for dinner.  However, my husband loves meat and potatoes and whines when I try to feed him salads. The advantage of Winter is my husband plows snow for the state in the Winter and is called out before dinner and I make tasty salads.  I have recently found that fruit (blueberries, strawberries and apples) make a simple cheap salad taste like an amazing salad from a fancy restaurant.  I like to use chicken that I have seasons with taco seasoning or bunch of different spices from the cabinet that sound good together.


Mexican Summer Salad
1 head iceberg (it's simple and usually cheap)
1 1/2 chopped cooked chicken breast seasoned with taco seasoning
1 tomato chopped (if on hand)
1/4  red/purple onion chopped (if you have)
Shredded cheese
1 chopped avacado
Crutons
Bluberries, strawberries sliced apple
Dressing

Cook chicken in seasoning and let cool while cutting salad up.  I chop my lettuce in smaller pieces for my munchkins for less clean up.  Chop everything up to your liking and stack on a plate or in a bowl (serving bowl if your like me 😆) and indulge.
